Extract the piece and drain the oil well. Preheat the oven to 250ºC. Place the piece on an oven rack tray halfway up, with another below that picks up the grease that you release. Bake the piece for 45-60 minutes. As each oven is different, check that the skin of the piglet is crispy by hitting it with a fork. Otherwise, continue to bake until crispy.
