Half Roast Suckling Pig
Remove the half suckling pig and drain the oil well. Preheat the oven to 220ºC. Place the half suckling pig on an oven rack tray at medium height, with another tray underneath to catch the fat that it releases. Bake the piece for 40 minutes.
As each oven is different, check that the skin of the suckling pig is crispy by tapping it with a fork. If not, continue baking until it is crispy.
